Juthour Restaurant Proposal
For Education, Nature Care, and Community Participation in Food, in Line with the “No Outside Food” Policy
1. Purpose
This proposal sets out the framework for Juthour to establish and operate an on-site restaurant at Mashjar Juthour that:
- Provides healthy, traditional, primarily organic Palestinian food.
- Serves individual visitors, schools, and organized groups.
- Functions as an educational tool on food, land, water, waste, and community.
- Implements the decision to prohibit groups from bringing their own food on site, in a way that supports the nature-preserve, non‑profit, and educational character of the project.
2. Alignment with the Charter
Purpose 1 – Educational, Environmental, Sustainable Garden
- The restaurant is a “living classroom” for food systems, soil, water, and waste.
- Operations (sourcing, cooking, cleaning, waste) are designed to minimize environmental impact and support regeneration.
- The restaurant generates sustainable revenue that supports the garden and programs, while remaining clearly not‑for‑profit.
Purpose 2 – Culture of Environmental Awareness and Education
- Every group and school experience includes a brief educational element linking what is eaten to how the land is cared for.
- The restaurant models low‑waste, seasonal, plant-forward eating as a community norm.
- Repeated visits by schools and groups help build a culture of environmental awareness.
