Add the carrots and celery. Add the beef mince and cook until no longer pink. Pour in the red wine and let it reduce slowly — don't rush this part, the wine needs time to do its job. Add the sugo. Bring everything to a boil. Add the beef stock and all the spices. Then turn the heat down low and let it cook all day. The smell alone will make your whole family appear in the kitchen. Finish with fresh basil. Serve with parmesan. And the secret nobody tells you — it tastes even better the next day.
